Oats and chocolate pudding with oranges and peanut butter. The true breakfast of champions.

Orange and chocolate: I never gave too much credit to this pairing. But maybe this was due to a particular snack of my childhood (in Italy well known). It tasted of something odd (and maybe chemical) that never got to me.

I re-evaluate this pairing when I tried it with real ingredients, and with this simple recipe everyone liked it. If you don't like orange, you can always try with some strawberry or red berry.

It's an easy preparation, to get into this next phase of social distancing: even if we will be asked to stay more in our home, our body is asking for a little help! 😀

We get iron from cocoa and oats, remembering of the useful association with Vitamin C (see my previuos post); we use some homemade peanut butter together with some flaxseed oil - rich in alfa-linolenic acid, source of Omega-3. The quantity of flaxseed oil used in the single portion, is about half of the reccomended daily intake of Omega-3*.

Ingredients for 3 servings:

- A cup of wholegrain oat flakes

- 1/2 liter (2 cups) of oat milk

- 2 spoons of unsweetened cocoa powder

- 2 oranges (or in substitution a red fruit rich in vitamin C)

- 6 tbsp. of peanut "sauce" (see next steps)

- Some sweetener of your choice (I used malt syrup or stevia)

Put the oats in a pot, adding milk to cover, like for a porridge preparation. Make it simmer for 10 minutes. Meanwhile, peel and cut the oranges (to make it fast: you can cut the wedges across) and keep them aside. When the oats are ready add the sweetener to the taste and the cocoa powder. Mix in the blender until smooth.

In the bowls, put the orange pieces at the bottom and keep some aside to decorate the top, together with the peanut sauce.

For the peanut sauce:

You can :

  1. Buy the peanut butter. But only the one made with just peanuts (no oil or other ingredients!) and mix 100 g (half a cup) with 5 teaspoon of flaxseed oil.

  2. Buy roasted and unsalted peanuts, or roast them in the oven at 160°C/ 320°F, like I did. Once they are cold, mix them in the blender for some minutes; it will slowly form the smooth and well known peanut butter; add flaxseed oil in the indicated quantity.


(*) the correct daily intake of Omega-3 should be considered in a balanced and controlled diet.
